Coconut Cucumber Refresher

This is a tasty and cooling beverage to keep on hand for hot summer days. I like almond, but you could use any nut milk. If you use cow’s milk (1cup) scald, cool and strain first.

Ingredients

  • ¼ cup fresh coconut meat

  • ½ cup almonds (blanched and peeled)

  • 1 date

  • 1 medium cucumber (peeled and seeds removed)

  • A handful of fresh mint Pinch of salt

  • Good quality filtered or spring water


DIRECTIONS

  • Grind coconut in a blender with a small amount of water to a medium consistency. You could use canned coconut cream, but I like the taste and texture of the fresh meat better.

  • Add almonds, date and a little more water. Continue blending to a pureed, almost paste-like, consistency.

  • Add cucumber, mint, salt and blend again.

  • At this point add more water to adjust to your liking. It should not be as thick as a smoothie or lassi, but not as watery as an herbed spa water. You will end up with about 20-24 ounces.

  • Makes enough to give you a couple of glasses to enjoy or share with an overheated friend.
