Spiced Poached Prunes

Perfect for post-travel imbalance. This delicious treat of prunes poached in orange juice and spices is loaded with soluble fibers to help keep your gut healthy. We all know how important this is, especially when traveling.

INGREDIENTS:

  • 2 cups fresh squeezed orange juice 

  • 6 good sized strips of orange rinds (use vegetable peeler)

  • 3 cloves

  • 2 3-inch pieces of cinnamon sticks

  • 2 allspice berries

  • 1 star anise

  • 1 1/8 inch slice ginger

  • 2 cups organic prunes/ approx. 10 oz

  • 1 pinch salt

DIRECTIONS:

  • Add all of the ingredients to a saucepan.

  • Bring to a boil and then lower to a simmer.

  • Reduce to half and ensure the prunes are plump and juicy.

  • It can be enjoyed warmly or stored covered in the refrigerator for a day or two and reheated to enjoy.
